Researchers have found that people with gum
disease are almost twice as likely to suffer from
coronary artery disease.

disease.

According to the
American Academy of Periodontology, people with
periodontal disease are almost twice as likely to have
heart disease. And one study found that the presence
of common problems in the mouth, including gum disease
- gingivitis, cavities, and missing teeth, were as
good at predicting heart disease as cholesterol
levels.
Several theories exist to explain the link between
periodontal disease and heart disease. Oral bacteria can
affect the heart when they enter the blood stream,
attaching to fatty plaques in the heart blood vessels
and contributing to clot formation.

of Gum Disease
People with severe gum
disease
often experience bleeding gums, and nicks
and cuts in the gums can provide a way for
bacteria to enter the bloodstream. If the
bacteria is not attacked by the immune system
in time, it can reach the heart
and may cause inflammation
of the inside lining of the heart chambers and
heart valves
or damage other organs. |
Pregnancy
Data suggests that women whose periodontal
condition worsens during pregnancy have an even
higher risk of having a premature baby. For some
early on in pregnancy - miscarrages or not being
able to get pregnant at all. |
Stroke
Additional studies have pointed to a
relationship between periodontal disease and
stroke. In one study that looked at the causal
relationship of oral infection as a risk factor
for stroke. |
Arteries
Oral bacteria appear to secrete sticky proteins
which can allow them to adhere to the walls of
the arteries, rather than being swept away by
the flow of blood. As the bacteria accumulate,
they contribute to the narrowing of the arteries
which is linked with cardiovascular disease.
Bacteria can also promote the formation of blood
clots which could severely damage the heart.

increases plaque build up, which may contribute
to swelling of the arteries. |

Lung Infections from bacteria can be acquired

the lungs. These droplets contain germs that can

Even after you pick your
crops, enzymes continue to break down
the nutrients, convert sugars to
starches, and generally degrade flavor
and texture. Blanching with steam or
boiling water stops this action and
preserves fresh-picked color. Tests
have shown that, after nine months,
vegetables that were blanched before
freezing retain up to 1,300 percent
more vitamin C and other nutrients
than vegetables frozen without
blanching.
|
Water
blanching tends to leach out water-soluble
vitamins. Soaking vegetables to clean them
can also literally wash away nutrients;
better to rinse and brush them quickly
under cold running water. Water blanching
is more effective at getting rid of
yeasts, molds, and bacteria if they are
present and for removing cabbageworms from
cauliflower and broccoli. With either
method, timing is key. Under-blanching can
actually encourage quality-zapping
enzymes. |
Steam Blanching
Clean and chop vegetables as if
using them right away.
Add 1 to 2 inches of water to a pot
and bring to a boil. Using a basket or
loose cheesecloth, suspend a layer of
the prepared vegetables just over the
boiling water, and cover.
When steam begins to escape, start
timing. Halfway through the blanching
process, check to make sure the
vegetables are not clumping together
and that they are cooking evenly.
Remove, cool, dry, and pack.

Water Blanching
Weigh prepared vegetables to make
1-pound portions.
Boil 1 gallon of water in a large
kettle.
Place vegetables in a mesh or
blanching basket and set in the
boiling water. Start timing when water
returns to boil.
Remove, cool, dry, and pack.
|
The quicker
you cool vegetables after blanching, the
more color, texture, and flavor you will
retain. Cool them for about the same
amount of time they were blanched (twice
as long for corn on the cob). Use the ice
bath method or place vegetable
pieces in a container and set that
container in a larger container filled
with ice water. To prevent ice buildup on
the vegetables once they're in the
freezer, dry them before packing. Spread
paper towels over cloth towels and place
the blanched vegetables on top. A table
fan will help speed drying. |
Here are blanching times for some
vegetables. The times listed are for
blanching in boiling water. I keep a
similar list slipped inside my cupboard
for a handy reference.
- Green Beans, 3 minutes
- Broccoli, chopped or stalks, 3
minutes
- Beets, small, 25-30 minutes; medium,
45-50 minutes
- Brussels Sprouts, small, 3 minutes;
medium, 4 minutes; large, 5 minutes
- Carrots, tiny, whole, 5 minutes;
diced or strips, 2 minutes
- Cauliflower, 3 minutes
- Corn on the cob to freeze on the
ear, small ears, 7 minutes; medium
ears 9 minutes; large ears 11 minutes
- Corn on the cob to cut for whole
kernel corn, 4 minutes-cool and cut
from ear.
- Corn on the cob to cut for cream
style corn, 4 minutes-cool and cut
from ear, scraping the cobs.
- Greens like spinach, 2 minutes
- Shelled Peas, 1½ minutes
- Snow or Sugar Snap Peas, 2-3 minutes
- Summer Squash like zucchini, slices
or chunks, 3 minutes; grated, 1-2
minutes.
